After my success with the Curry base, I decided to attempt adapting it into Dal Makhani, a very popular dish that is Lentils in a creamy buttery sauce.
To begin, make everything up to the blending in the curry recipe. The only difference would be to use more chili as dairy cuts the spice of food due to a effect known as science.
The big difference in this recipe is you will need, in addition to the ingredients in the curry recipe, is:
Some cream (a little more than a DL)
Butter (30 or 40 grams, I measured with my stomach)
Lentils (about 2 DL, covered in water about 2 CM above the lentils, for minimum of an hour or ideally overnight).
As said, make the curry recipe up to and including the blending.
After blended, put back into warm pan (again, good to start the rice right before this) and add the butter, like so:
Mix the butter in until it is entirely melted, then add the lentils (it’s fine to add some of the water that is left, as well).
Stir the lentils in, cover, and let cook for 15-20 minutes on a medium low heat, or until the lentils are soft. You’ll want to check this frequently so make sure the Simpsons episode on in the background should be one you are familiar with.
If it starts to get too low in liquid either add a bit more butter or some water. This will take a few times to get used to as you add cream at the end, so that needs to be taken into account when adding more liquid. I added a bit more. I will not say if it was butter or water.
When the lentils are done, add the cream.
Stir the cream in until it is all mixed, you’ll want to let this sit for 5 minutes or so, you don’t want to over cook with the cream in or it will lose that delicious cream flavor. Or maybe not, either way you probably want to eat as soon as possible at this point, so 5 minutes’ll do.
It should look like this:
This is pretty much ready to eat. By pretty much I mean it’s not in a bowl. Put it in a bowl and top with some fresh coriander. If you don’t have fresh coriander you can substitute for the fresh coriander you went and bought while you were waiting on the tomatoes.
